Chocolate is my weakness. Peppermint combined with chocolate is a double weakness. Essentially, peppermint brownies may be addictive in my life. Because I love them. Really though, what isn’t there to love about peppermint and chocolate?
Growing up, my Dad loved brownies. He especially liked the brownies with nuts, and I have fond memories of making them for him frequently. As my own little family has grown, I still enjoy making brownies. My favorite brownies now are made with dark cocoa powder, and are a little less sweet than the ones I made in my teens and college years. But they are still delicious and amazing. So I hope you enjoy this fun rendition of peppermint brownies, made with Peppermint VitalityTM essential oil.
- 3/4 cup sugar
- 1/2 cup salted butter softened
- 1 tsp vanilla extract
- 8 drops Peppermint Vitality essential oil
- 2 eggs
- 2/3 cup organic unbleached flour
- 1/2 cup dark cocoa powder
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/4 cup water
- Preheat oven to 350*.
- Grease an 8"x8" glass baking dish.
- Cream together sugar, butter, vanilla, and Peppermint Vitality essential oil.
- Beat in the eggs until combined.
- Add flour, dark cocoa powder, baking powder, and salt.
- Mix in about 1/4 cup of water to make the batter spreadable. (It will still be very thick)
- Spread into the greased glass baking dish.
- Bake peppermint brownies for 20-25 minutes, or until a knife comes clean.
- Let rest until cool, then enjoy delicious peppermint brownies!
Gluten Free Option
This recipe is very easy to make for your gluten free friends, as well. Simply substitute gluten free oat flour for the unbleached white flour, and voila! You will be set and have a delicious gluten free dessert for your friends or family!
Why These Peppermint Brownies Are My Favorite
I already mentioned that chocolate and peppermint combined are pretty much my favorites. So obviously, that helps with these peppermint brownies being a favorite. That said, there are other reasons why I really like this recipe. It is more of a dense brownie, and I really appreciate that. I also love that while this recipe is sweet, it is not overwhelmingly sweet. It’s subtle and oh-so-good. I also love that it is DARK chocolate. This definitely helps with this recipe not being as sweet. But it’s worth mentioning again.
Considering I love chocolate, it would come as no surprise that I like chocolate chips. But it is very helpful that my favorite peppermint brownies do not require chocolate chips. This means that I don’t need to keep chocolate chips around my house, which in turn means that I don’t eat chocolate chips. 😉 Just the yummy brownies when I decide to make them.
All of the ingredients are items I pretty much always have around the house. If we are wanting a simple dessert that I can throw together in a few minutes, these are an easy choice. Also, if you would prefer to have a simple dark chocolate brownie recipe, just omit the Peppermint Vitality essential oil and you have a good, old fashioned, delicious brownie.
